Vanilla Kipfel
Ingredients:

5 oz
Plain Flour 5 oz
Butter 5 oz
Ground Almonds 2 ½ oz
Vanilla Sugar (Bury two Vanilla
Pods in a Jar of Granulated Sugar) 2
Egg Yolks
Method:
Preheat oven
to 350 degrees. Line a jelly
roll pan or baking sheet with parchment paper or butter the pan.
1.
In a large bowl, rub the flour, butter & sugar together.
2.
Add egg yolks and ground almonds and knead together until smooth.
3.
Pinch a small piece from the dough, roll into a ball and then into a cigar shape
about 2 to 2 and ½ inches long.
4.
Place on the prepared cookie sheet and shape into a crescent.
5.
Repeat until all the dough has been used, making sure that there is at least ¼
of an inch space between each cookie to allow it to spread.
6.
Bake in the center of a preheated oven for about 20 minutes or until cookies are
light brown.
7.
When the cookies are baked, remove from the oven and roll them in Vanilla Sugar
right away.
8.
Leave to cool on a wire cooling rack.
9.
Store in an airtight container.
