St. Peter’s Bread (Komis Brot)

Ingredients:      

3         Eggs
1 cup      Sugar
1 cup      Oil
2 teaspoons  Baking Powder
1 teaspoon  Vanilla Essence
3 cups      Plain Flour
1 cup      Chopped Walnuts
1 cup      Chocolate Chips

Method: 

Preheat oven to 350 degrees.
Butter a jelly roll pan.

    1.                 In an electric mixer, beat one egg at a time into the sugar.

2.                 Add oil and Vanilla. Beat until smooth.

3.                 Turn the mixer to the slowest speed and add the flour and baking powder. Continue stirring until well blended.

4.                 Remove the mixing bowl from the mixer and fold in the chopped walnut and chocolate chips by hand until evenly distributed.

Note:  The dough should be very sticky.

5.                 With floured hands, remove approximately 1/3 of the mixture and place on a well floured surface.

6.                 Shape this into a cylinder about the length of the cookie sheet.

7.                 Pace cylinder on the cookie sheet allowing room for expansion.

8.                 Repeat with the other two thirds of the dough. You will now have 3 equal sized cylinders on the cookie sheet

9.                 Bake in the center of a preheated oven for 30-40 minutes or until tops are light brown and the cylinders are firm.

10.            When the cylinders are baked and removed from the oven, reduce the oven temperature to 200 degrees.

11.            After cooling the cylinders on the cookie sheet for about 10 minutes, cut them into slices about ½ an inch thick with a very sharp knife.

12.            Place these slices on an un-greased cookie sheet and dry them in the oven at 200 degrees for about 45 minutes to 1 hour or until firm like a biscuit. Check frequently.

13.            Can be stored in an airtight container for up to 2 months. If they become limp, dry them out in a slow oven for 5 – 10 minutes
