Peanut Butter Cookies
Ingredients:
1/2
cup Butter
1/2
cup Peanut Butter
1/2
cup Sugar
1
egg
½
tspn. Vanilla Essence
1 ¼
cups Sifted Plain Flour
¾
tspn. Baking Soda
1/
tspn. Salt.
Method:
Heat
oven to 375 degrees.
Line
two cookie sheets with baking parchment.
Cream butter, peanut butter, sugar, egg & vanilla together until thoroughly
blended.
Sift
together the dry ingredients.
Blend into creamed mixture.
Shape into one inch balls and roll in granulated sugar.
Press down with the tines of a fork and place one half peanut in the center
of each cookie.
Place in the center of
the oven heated to 375 degrees for 10-12 minutes or until light brown.
Cool before removing and then carefully transfer to a wire cooling rack.
When completely cold store in an airtight container.
