oz Margarine 8
oz Plain Flour 2
oz Sugar 1 teaspoon
Baking Powder 2 Eggs Pinch of Salt
Filling:
Strawberry Jam
(I recommend *President's Choice Brand)
Method:
Heat oven to
350 degrees Butter a large
oblong jelly roll pan
Pastry:
1.
Rub together Flour, Baking Powder, Salt & Sugar until the consistency of fine
breadcrumbs.
2.
Make a well in the center and add the eggs.
3.
Mix with a fork until combined and then knead by hand adding a little more flour
if required.
4.
Roll out the pastry and using a cookie cutter cut as many cookies as you can
from the pastry.
5.
Cut out a small hole in the center of half of the cookies.
6.
Bake in the center of the oven for 10 minutes at 350 degrees or until light
brown.
7.
When the cookies are cold spread strawberry jam on the solid half of each
cookie.
8.
Place the cookies with a hole on a piece of paper kitchen towel and sprinkle
with sifted powdered sugar.
9.
Spread the cookie without the hole with President's Choice Strawberry Jam then
carefully place the cookie sprinkled with powered sugar on the top gently
pressing it into the jam. If you place a little more jam to the center of the
cookie it will fill the hole in to top cookie making it look very attractive.
Note:
Do not assemble the cookies until you are
ready to serve them because the jam will make the biscuit soggy.
The two separate halves,
without the jam, can be stored in an
airtight container until needed.
