Candied Orange Peel

Ingredients:           

Collect the orange peel from fresh oranges and cut them into 1 inch by 1/2 an inch pieces.

Method: 

In a large saucepan cover the cut up pieces of orange peel with water.

Bring to the boil and then drain. Repeat 8 times.

Measure the peel and add equal amounts of water and sugar.

Boil for 45 minutes on medium heat or until the peel is transparent. Watch that it does not burn.

Strain the peel but be careful not to touch it with your hand because it is BOILING!

Roll in sugar to separate the pieces and leave to dry overnight on a cookie sheet. Make sure all the pieces are separate.

Next day or when they are very dry:

Melt chocolate over a double boiler and dip the pieces of orange peel into the chocolate. Place on a cookie sheet covered with tin foil. Let it stand until the chocolate is solid or place in the fridge for a short while.

Store in an airtight container in the fridge until needed.

Can be frozen but better to keep in fridge.
