Almond
Cookies
Ingredients:

8 oz
Ground Almonds
8 oz
Fine Granulated Sugar
2
Eggs (separated)
Method:
Preheat oven
to 350 degrees.
Line a jelly
roll pan or baking sheet with parchment paper.
1.
In an
electric mixer, beat egg whites and sugar together until
the mixture is white
but not stiff.
2.
Add egg
yolks and ground almonds and beat until a paste is formed.
3.
With damp
hands pinch off a small piece of the mixture and roll into a ball about ¾ of
an inch in diameter.
4.
Place on the
prepared parchment paper and push a whole brown skinned almond deep into the
cookie.
5.
Repeat until
all the paste has been used, making sure that there is at least ¼ of an inch
space between each cookie to allow it to spread.
6.
Bake in the
center of a preheated oven for about 20 minutes or until cookies are light
brown.
7.
When the
cookies are baked, remove from the oven and leave to cool on the parchment
paper for 5 minutes. They will then be ready to remove to a wire cooling rack,
without sticking to the paper. Store in an airtight container. Makes
approximately 40 cookies 1 ½ inches in diameter.
